MY VEGAN JOURNEY:
In 2003, while I was living in Miami, I lost my amazing mother Olive Excell to Diabetes. A few months after the lost of my mother, I started experiencing some digestive issues. I went to the doctor but the doctor could not find what was causing my digestive issues. I decided to try a holistic doctor, who suggested that I change my traditional diet to a vegetarian diet. However, after a year of being a Vegetarian, I still had digestive issues, so I started reading books on different dietary lifestyles and with the help of my holistic doctor, I decided to try the vegan diet.
At first, my vegan journey was difficult, overwhelming and frustrating because I did not know how to prepare vegan meals. My beloved partner Philip Michael Thomas (Miami Vice) bought me a vegan cookbook, so I started making meals from the cookbook. Sometimes we would eat at various vegan restaurants in Miami, and also when we visited my family in New York City, we would eat at different vegan restaurants. The vegan meals were delicious, tasty and satisfying. As time went by my digestive issues started to improve. I wanted to learn how to prepare more exquisite and tantalizing vegan cuisines, so I went to culinary school. However, it was not until I started experimenting in the privacy of my kitchen with fresh herbs such as cilantro, parsley, basil, thyme, dill and oregano, along with spices, nuts and seeds that I was able to created some of my own vegan dishes. My vegan journey became very exciting when I was able to created my own cashew cheese sauce, sesame sauce, walnut pesto, and walnut meatballs.
I wanted to keep some of my Jamaican culture into my vegan lifestyle, so I created a traditional Jamaican style inspired dish with Jerk chickpeas, jerk plantain and quinoa rice and peas. Growing up in Jamaica Coconut Gizzada was one of my childhood snacks. However, the traditional way of making the Gizzada did not fit into my vegan lifestyle, so I created a No Bake Gizzada tart by substituting nuts instead of flour to make the crust, and coconut cream instead of sugar for the filling.
Smoothies and fruits are a big part of my vegan lifestyle. I love pineapple because it contains the powerful digestive enzyme Bromelain. The pineapple fruit itself is an old Caribbean Indian symbol of warmth and good cheer. Pineapples have traditionally been hung outside homes to welcome visitors. In 2015, I created Vegan Tuneup Cafe with the mission to Educate, Inspire and Promote the vegan lifestyle through cooking classes and my Sensational Vegan Recipes cookbook. I incorporated the pineapple as part of my logo to welcome you on your journey to a healthy vegan lifestyle.
