MY VEGAN JOURNEY:
In 2015, I founded Vegan Tune Up Cafe with a mission to educate, inspire and promote healthy living through cooking classes, my Sensational Vegan cookbook, and my Youtube channel to help share my passion for promoting a healthy lifestyle.
In 2003, while I was living in Miami, I lost my amazing mother Olive Carol Excell to Diabetes. A few months later, I started experiencing some digestive issues. I went to my Primary Care Physician, but she could not pinpoint the cause. Determined to find an answer I went to a holistic doctor, who suggested that I change my traditional Jamaican diet to a vegetarian diet. However, after a year of being a vegetarian, I still had the same issues. Eager to find an answer, I started researching nutrition, reading books on different dietary lifestyles, and information on healing through food. The vegan lifestyle caught my attention, and with the help of my holistic doctor, I went fully vegan.
At first, going vegan was overwhelming and frustrating because I did not know how to prepare flavorful and satisfying meals. My beloved partner Philip Michael Thomas (Miami Vice) bought me a vegan cookbook. I enjoyed making some of the recipes in the cookbook, but sometimes we ate at various vegan restaurants in Miami, and in New York City when we visited my family. The meals were delicious, tasty and satisfying. As time went by my digestive issues started to improve. As my health improved, I became passionate about the vegan lifestyle. I wanted to learn how to prepare more exquisite and tantalizing cuisines, so I went to culinary school. However, it was not until I started experimenting in my kitchen with fresh herbs such as cilantro, parsley, basil, thyme, dill and oregano, along with spices, nuts and seeds that I was able to create some of my own signature recipes -- like cashew cheese sauce, sesame sauce, walnut pesto, and walnut meatballs.
Staying connected to my Jamaican culture was very important to me, so I created a traditional style Jamaican dish inspired by the flavors I grew up with. One of the dishes I created was the quinoa rice & peas bowl with Jerk chickpeas & jerk plantain. I also reinvented the Gizzada, my favorite childhood snack. I substituted nuts to make the crust instead of flour, and coconut cream for the filling instead of sugar.
Smoothies and fruits are a big part of my vegan lifestyle. I love pineapple because it contains the powerful digestive enzyme Bromelain. The pineapple fruit itself is an old Caribbean symbol of warmth and hospitality that was traditionally displayed to welcome visitors. I decided to incorporate the pineapple as a part of my logo to welcome you on your journey to a vibrant healthy lifestyle.
